Recipe Summary Chicken Chow Mein Salad

Hearty, delicious super-easy green salad reminiscent of traditional chicken chow mein. Add a splash of your favorite Asian dressing and you have a complete meal.

Ingredients | Teacup Chow Chow Dog Puppy

3 cups fresh spinach

1 (15 ounce) can mandarin oranges, drained

1 cup cubed cooked chicken

1 cup chopped red cabbage

2 stalks celery, thinly sliced

½ cucumber, peeled and diced

½ cup dried cranberries

½ cup chopped pecans

¼ cup thinly sliced leeks

Directions

Combine spinach, oranges, chicken, red cabbage, celery, cucumber, cranberries, pecans, and leeks together in a bowl.

If you don't keep cooked chicken around, just cook the chicken while you are preparing the rest of the salad and the prep time should be the same.

Substitute cooked, seasoned tofu for the chicken and you have a great vegetarian dish.

Green onion can be substituted for the leeks, if desired.
